20 Minute Spicy Tacos

 

 

In the past two weeks, I have already made these babies twice.  They are likely our go to Taco Tuesday meal for the foreseeable future.  They are quick, easy, and even the two year old is gobbling them up!

These tacos are super easy to throw together and taste like you spent way more time on them than you did.  They are just a few ingredients that you can pick up on your way home.

Pop your shrimp in the oven and bake according to the package directions.  While they bake, you can mix up your coleslaw mix and sauce.

For the slaw:

Mix two cups of slaw mix with the juice of 1/2 the lime.  Add in 1/4 of chopped cilantro and 1/4 tsp. of Salt & pepper.

(Initially, I was going to just use the plain slaw mix.  But, I had some left over lime and cilantro from other parts of dishes the first night I made this.  I mixed them in with the slaw and boy did it make a difference!)

For the sauce:

Mix together 1/2 cup of mayo with the juice of the other half of that lime.  Add in 1 Tbsp. of sriracha and 1/4 tsp. of salt and 2 tsp. of sugar.

(We did not use all the sauce either time that we had these tacos.  I keep it in a container in the fridge to add to sandwiches).

Assemble the tacos my layering up the slaw and shrimp and top with the sauce.  Just like that, you’re ready to eat!
