Broccoli, Rice, Cheese & Chicken Casserole

This recipe is a favorite in our house. It is a full meal all on it’s own, and it freezes well, so I often will double the recipe and freeze half. The original recipe does not call for chicken, and without it, it becomes my go to side dish for family dinners or potlucks. So here it is!

Ingredients:

-1 bag of frozen, chopped broccoli, cooked and drained

-1 cup of instant rice,  uncooked

-1 cup milk

-2 cups cooked chicken, cubed or shredded (I use my Kitchen-aid mixer to shred- so easy!)

-1 can of cream of soup (chicken, mushroom, potato, etc.- although, I would avoid using chicken unless you are adding chicken to the casserole)

-1 cup sharp cheddar cheese

-1 can (the small one) of French fried onions

 

Instructions:

-Blend together the first 5 ingredients and 1/2 the can of French fried onions

-Bake in a buttered casserole dish at 350 degrees for 35-45 minutes

-Sprinkle the remaining French fried onions on top for the last 15 minutes of cook time
